Oh yeah, optical Theremins are a very old idea — I think Forrest Mims had a design. But that’s the nice thing, it’s a very simple circuit.

I will point out that the photo of a Beep-it above is not a photo at all, but an image from a scanner that I slapped my prototype onto :)

The purchasable versions have a finer drill pattern and construction, and the addition of a 1/4″ jack for connecting to effects/sound systems.
